(April 19, 1945 – February 2, 2023)

Carol Sue Mitchell was born April 19, 1945, to Annie Leona Hancock Bishop in Dublin, Texas. She passed to her reward on February 2, 2023, in Stephenville, TX. She married the love of her life, George Mitchell on August 27, 1982. 

Carol worked at the Erath County Sherriff’s office and later at the Erath County Clerk’s office until she retired. 

Carol loved camping and was the Queen of the camping kitchen and people did not mess with her kitchen. She and George made the camping trips memorable, and they still talk about them today. She loved dancing and above all she loved her family and her special friends. She had an ornery sense of humor. Game nights with her family and friends were a highlight for her. She loved her plants and flowers, and she sure had a green thumb to keep them beautiful. Her beloved husband George, her daughters, grandchildren and her great grandchildren were the light of her life. 

She is survived by her husband George, her daughter Becky and Mick Pollard, Granddaughter Jessica and Piper Enzeroth, Grandson Chance Peacock, Granddaughter Amanda and Kirk Wysong, her sister-in-law Sandra Pyburn, numerous great grandchildren, nieces, nephews, and several very close friends. 

She is preceded in death by her mother, Annie Pyburn, brothers, Kenny Bishop, Cliff Pyburn, and daughter LaDonna Hurst-Peacock.

We would like to thank Dr. Moore and his staff, Shannon Elrod and Amanda Wynn of the Alpha Omega Hospice, and the Lonestar Rehab for taking such great care of Carol during her long illness. 

In lieu of flowers the family asks to help pay the funeral expenses. 

There will be a graveside service held Thursday, February 9, 2023, at the Upper Greens Creek Cemetery at 2:00pm
